Outlier Distilling Company

Outlier Distilling Company is one of the most distinctive voices in the UK’s craft rum movement—an independent distillery based on the Isle of Man, doing things their own way and loving every minute of it. Founded by Rick Dacey and Ian Warborn-Jones, Outlier operates from a converted milking shed on Ballakelly Farm, using a wood-fired still powered by off-cuts from the local sawmill. Their approach is fiercely sustainable, proudly local, and refreshingly unpolished—spirits with soul, made with integrity.

Their flagship rums, Hoolie and Hurricane, are made entirely on-site from imported molasses (because, let’s face it, sugarcane doesn’t grow well in the Irish Sea). Fermented, distilled, bottled, and labelled by hand, these rums are bold, characterful, and unapologetically Manx. Hoolie, named after the island’s infamous winds, is a clean, punchy white rum perfect for daiquiris, while Hurricane dials up the strength and complexity with overproof swagger and a touch of coastal funk.

This July, Outlier joins the New Wave UK Rum stand at Cocktails in the City (CitC), standing alongside fellow innovators Goldstone Rum, DropWorks Distillery, State of Rum, and the ever-creative Laki Kane. It’s a celebration of British rum at its most original—where island grit meets garden party glamour.

Expect Outlier to bring their signature energy and a few surprises to the stand, with serves that showcase their bold flavours and rebellious spirit. Whether you’re sipping a classic daiquiri or diving into something a little more offbeat, their rums promise to leave a lasting impression.

For those who like their spirits with a story—and a bit of wind in their hair—Outlier is one to watch.

See you at the bar.
