DropWorks Distillery is redefining British rum from the ground up. Based in Sherwood Forest, they’re Europe’s largest rum distillery and one of the few in the UK to ferment, distil, and mature every drop entirely in-house. Their approach is driven by innovation—from their world-first wild trinity yeast to their bespoke copper stills—and a refusal to take shortcuts. No imported bases, no additives, just honest, characterful British rum.
Their Barrel Drop expression captures that ethos beautifully. Aged in American and Portuguese oak, including a custom STR hybrid cask, it delivers notes of dark fruit, spiced toffee, and rum ‘n’ raisin, with a warm, rounded finish that lingers like a good conversation.
This July, DropWorks joins the New Wave UK Rum stand at Cocktails in the City (CitC), where they’ll be proudly pouring alongside Goldstone Rum, Outlier Distilling Company, State of Rum, and the ever-imaginative Laki Kane. Taking centre stage is Georgi, Laki Kane’s resident rum expert and global rum educator, who’ll be using Barrel Drop in a Milk Punch-style cocktail tailored for the sun-drenched garden party vibes of CitC. Expect a clarified, velvety serve that highlights the deep, dessert-like notes of Barrel Drop, offering complexity and refreshment in equal measure.
