The vision behind Chotto Matte was to create an exciting and accessible fine dining experience. After gaining knowledge from multiple successful hospitality ventures, Zdesar set out on a journey from Japan to Peru to learn traditional techniques and meet with local chefs. His heart was set on Nikkei cuisine, which blends Japanese and Peruvian culinary traditions.
